Quick and easy – sweet and sour teriyaki tofu

For years, I've avoided takeout meals and relied on equally tasty, healthier homemade versions of all my favorite dishes. This includesCauliflower Kung Pao,Garlic Broccoli Stir Fry,Fried Asian noodlesand this teriyaki tofu recipe.

Made with simple, inexpensive ingredients, this crispy tofu teriyaki can be made in the oven, air fryer, or stovetop for a quick, easy, and hearty meal packed with flavor and plant-based protein. Even tofu skeptics will enjoy it when it's crispy on the outside and tender on the inside and paired with a flavorful, homemade sweet and sour sauce. As a soy-free version and with even more taste, you can alsoChickpea tofube used.

The preparation couldn't be easier either. Press the tofu, cut into pieces, fry until crispy while the sauce is being prepared, mix everything together (no marinating required!) and enjoy with noodles or rice and vegetables. A healthy and quick meal you'll make every week! The sauce can even be made in advance and the leftovers frozen!

Ingredients for Teriyaki Tofu

  • Tofu:Use firm or extra-firm tofu. For a soy-free versionChickpea tofu(for firmer tofu I added 1 teaspoon of agar agar powder to the recipe).
  • Food starch:Or arrowroot flour or potato starch. This coats the tofu and gives it a super crispy shell.
  • Spices:Season the tofu with onion powder, garlic powder, salt and black pepper.
  • Garnishes:Sesame seeds and finely chopped spring onions or chives are the perfect accompaniment for sweet and sour tofu.

Teriyaki Sauce

  • Maple syrup:I like to use maple syrup to naturally sweeten the tofu marinade. If desired, brown sugar or a combination of both can also be used.
  • Flavorings:This homemade sweet and sour sauce is very flavorful with fresh garlic and ginger.
  • Soy sauce:Low-salt soy sauce is also suitable. For a gluten-free dish, tamari or coconut aminos can be used instead.
  • Lemon:I prefer lemon juice (or lime juice). However, rice vinegar or mirin (sweet Japanese rice wine) makes a more traditional teriyaki sauce.
  • Water:You can also use some orange or pineapple juice for more flavor.
  • Food starch:To thicken the sauce.

Optional additions

  • Roasted sesame oil:Just one teaspoon gives the tofu marinade a delicious, nutty note.
  • Spices:To give the sauce more heat, stir in some hot sauce or red chili flakes.
  • Stir-fried vegetables:Broccoli, bok choy, carrots, baby corn, bean sprouts, green beans, cabbage, red peppers, onions, etc.

Make your own teriyaki tofu – step-by-step

This sticky tofu recipe only requires three steps: prepare the tofu, prepare the teriyaki sauce and combine the two together.

  • If regular tofu is used, it should first be pressed for at least 15 minutes. Then cut into small, bite-sized cubes (about 3 cm) or triangles.

To press the tofu, place the block between two layers of kitchen towels, then place a cutting board and something heavy, such as a cast iron skillet or several heavy books, on top.

  • Next, combine the starch, onion powder, garlic powder, black pepper and salt in a medium bowl (or ziplock bag), add the tofu and mix to coat the tofu completely.

  • Place the tofu in a single layer on a baking sheet lined with parchment paper. Spray generously with cooking oil and bake at 200 degrees Celsius for about 25 minutes, turning halfway through, until the tofu is golden brown and crispy.

Alternatively, you can also use the tofuPrepare in the hot air fryer at 200 degrees Celsius for 12-14 minutes, turning it over halfway through. Meanwhile, prepare all side dishes such as vegetables, pasta, rice, etc.

  • In the meantime, chop the garlic and ginger and combine with the remaining sauce ingredients in a pan and bring to a simmer, stirring frequently.

  • Mix the starch with two tablespoons of water and stir into a lump-free paste.
  • Add this mixture to the pan and cook over medium heat, stirring constantly, until the sauce thickens. Then remove from heat. Taste the sauce and adjust the ingredients as desired, e.g. B. more maple syrup, soy sauce, etc.
  • Add the crispy tofu to the pan, mix well with the sauce and serve with a side dish of your choice, garnished with sesame seeds and finely chopped spring onions or chives. Bon appetit!

For fried teriyaki tofu

  • First, season the tofu and fry it in a little oil until it is browned and crispy on both sides (do not turn it around while frying).
  • In the meantime, prepare the sweet and sour sauce.
  • Add the sauce to the tofu and stir-fry until the tofu is well coated, 30-60 seconds.

If you want to fry the vegetables:Remove the crispy fried tofu from the pan, add the vegetables and fry until crispy for 3-5 minutes while the sauce is prepared.

How to store?

Prepare in advance:The sauce can be made 1-2 days in advance and stored in an airtight container in the refrigerator. You can do the samehomemade chickpea tofuPrepare 2-3 days in advance.

Store:Sweet and sour tofu tastes best fresh, while the tofu is still crispy. However, if you don't have a problem with soft, sticky tofu, you can store cooled leftovers in an airtight container in the refrigerator for up to 4 days.

Freeze:Although the texture of the tofu changes as it thaws, the leftovers (the entire teriyaki tofu or just the sauce) can be frozen for up to 2 months. Thaw in the refrigerator overnight before reheating.

Reheat:Reheat either in the microwave (1-2 minutes), in the oven (at 175°C for 10-15 minutes) or on the stove (on low until heated through). If necessary, add a splash of water to make the sauce a little more liquid.

What do you serve with teriyaki tofu?

I like to enjoy the dish as a tofu pan, no matter how I prepare the tofu, plus:

  • Grain:Paired with noodles, quinoa, or rice (or low-carb cauliflower rice), this tofu stir-fry becomes a complete meal.
  • Vegetable side dishes:The teriyaki fried tofu can be combined with broccoli, bok choy, green beans, asparagus, cauliflower, Brussels sprouts, etc.

The leftovers can also be used as filling forTacosand use in wraps or enjoy as part of a salad or budda bowl.

Recipe Notes

  • Taste:The ingredients of the sweet and sour sauce can be changed as desired to achieve a sweeter, spicier or saltier taste.
  • Adjust the consistency of the sauce:If it gets too thick, stir in a little water (or juice).
  • Use leftover sauce:The sauce is ideal for stir-fries with other vegan protein sources and vegetables, for stirring into pasta, for marinated tofu, etc.

Ingredients

For the tofu

  • 3-4 HE maple syrup (see notes)
  • 2 TL fresh ginger grated
  • TL fresh garlic finely chopped
  • HE low-salt soy sauce oder Tamari oder Kokosaminos
  • 120 ml Water
  • 2 HE lemon juice or rice vinegar
  • 1 HE Cornstarch or arrowroot flour + 2 tbsp water
  • 2 HE Mirin or dry sherry (optional)

Other ingredients

  • Cooked rice noodles or rice
  • Fried vegetables of your choice
  • spray oil
  • Fresh chives hacked
  • Sesame together

Instructions

    Preheat the oven to 200°C and line a baking tray with baking paper.

Remarks

  • Maple syrup:You can use any other liquid sweetener of your choice.
  • Use vegetables of your choice:I used paprika because it goes well with this sweet and sour tofu. However, you can also use other vegetables.
  • Tofu:Tofu: If you can't eat tofu due to a soy allergy, I recommend you try my recipe forChickpea tofuand add 1 teaspoon of agar agar for firmer tofu.
  • Freeze leftover sauce:You can double the sauce recipe and freeze the leftovers. The teriyaki sauce not only tastes delicious in combination with tofu, but also just with fried vegetables!
